Healthy Raspberry Salad With Chicken and Goat Cheese Recipe
If you are looking for a healthy lunch idea that’s easy to make and oh so yummy, you’ve got to try this raspberry salad with chicken and goat cheese recipe!
This salad is so simple to make, especially if you already have meal prepped chicken or leftover rotisserie chicken ready to go and frozen.
It’s the perfect quick and healthy lunch idea to make on those hot summer days when you don’t feel like cooking or to pack as a quick lunchbox idea to bring to work.
This is also a very budget-friendly meal idea to make when raspberries are in season and you can get them for less at the grocery store or even better if you can pick your own wild raspberries!!
Raspberry Chicken Mixed Green Salad

Serves: 4
Salad Ingredients:
4 c. mixed salad greens rinsed and patted dry
1 lb. rotisserie or other cooked chicken breast, sliced
1 c. fresh raspberries
4 oz. goat cheese, crumbled
Salad dressing, of choice*
Optional Salad Dressing (shown):
½ c. lemon-flavored olive oil
¼ c. white balsamic vinegar
¼ t. cayenne pepper
¼ t. garlic powder
Sea salt and black pepper, to taste
Raspberry Salad Directions:
- If using, prepare the salad dressing by adding all ingredients to a mason jar. Cover and shake until well combined. Set aside until ready to use.
- Divide mixed salad greens among four chilled individual serving plates. Top with sliced chicken breast, fresh raspberries, and goat cheese.
- Drizzle each plate with salad dressing of choice and serve immediately. Enjoy!
